Dumpling Soup for a Joburg Winter: Easy, Warming and Gut-Friendly
Share
When the Highveld turns icy, nothing beats a bowl of something hot. This dumpling soup takes about 20 minutes, uses a handful of ingredients and tastes like it simmered all afternoon.
What You'll Need
- 2 cups Dr Broth Bone Broth (we like the Roast Chicken & Herbs)
- 1 cup water
- A handful of frozen dumplings (about 12, any flavour)
- 1 handful baby spinach or chopped cabbage
- 2 spring onions, sliced
- 1 tsp soy sauce
- Chilli oil or a spoon of kimchi, to serve (optional)
Method in a Nutshell
- Heat the bone broth and water in a pot until gently simmering.
- Add the soy sauce, then the frozen dumplings. Simmer for the time on the dumpling pack, until cooked through.
- Stir in the greens for the last minute.
- Ladle into bowls, top with spring onion and a little chilli oil or kimchi.
Why we love it
Bone broth is a slow-cooked classic, and it gives a simple soup real depth. Add a side of fermented kimchi and you get a bowl that is comforting and easy on the stomach. Keep a bag of dumplings in the freezer and dinner is never far away.
