Spring means lighter days and busier mornings. These lunchbox ideas lean on a few pantry and freezer staples, so you can pack something good without much effort.
What You'll Need
- Frozen dumplings and a dipping sauce
- Cooked rice (leftover is perfect)
- Kimchi or Szechuan carrots for crunch
- Chilli crisp for heat
- Eggs, cucumber and spring onion
Method in a Nutshell
- Dumpling box: steam or pan-fry dumplings, let them cool a little, pack with dipping sauce and cucumber slices.
- Egg fried rice box: fry cold rice with an egg and a splash of soy, top with spring onion and a spoon of chilli crisp.
- Kimchi rice bowl: rice, a fried or boiled egg, kimchi and a few sheets of seaweed snack.
- Thai-style fried rice: stir a spoon of fried rice paste through hot rice and veg or leftover chicken.
- Crunch on the side: pack a little Szechuan carrot or kimchi in a small tub, so it stays crisp and does not wet the rice.
Tip: keep wet and dry parts apart, and pack hot food only after it has cooled.
