Braai Meets Banchan: Asian Sides for Your Heritage Day Braai

Heritage Day is all about the braai. This year, bring a few Korean-style sides to the fire: they are quick, big on flavour and go with everything from boerewors to chicken.
What You'll Need
- Gochujang paste or CJW Gochujang Marinade
- Chicken pieces or pork ribs for the braai
- Kimchi (500g jar)
- Cabbage, carrots and spring onion for the slaw
- Honey, soy sauce and sesame oil
- Gua bao buns, for a pulled-meat or boerewors twist
Method in a Nutshell
- Make a glaze: mix 2 tbsp gochujang, 1 tbsp honey and 1 tbsp soy. Brush on chicken or ribs in the last 10 minutes on the coals so it does not burn.
- Make a kimchi slaw: shred cabbage and carrot, chop a handful of kimchi, dress with a splash of sesame oil and a little soy.
- Steam the bao buns and fill with sliced braai meat, kimchi slaw and spring onion.
- Serve with a bowl of extra kimchi on the table, next to the pap and chakalaka if you like.
Why it works
Fermented, tangy kimchi cuts through smoky, fatty meat, much like a good chakalaka does.
